Gluten-Free Apple Cinnamon Pancakes

With Pancake Tuesday coming up next week, I thought I’d share this gluten-free apple cinnamon pancake recipe. I typically make these on weekends for my kids and top them off with some coconut whip, honey and fruit. These pancakes are loaded with protein and fibre to keep you fuelled up for the morning.
Gluten Free Apple Cinnamon Pancakes
I N G R E D I E N T S
1/2 cup gluten free oat flour
1 cup gluten free flour (Like Bob’s Red Mill 1:1 gluten free flour)
1 tsp baking powder
1 tsp of vanilla
1 tbsp flax
2 eggs
2 tsp of cinnamon
1/4 tsp of ground ginger
1 apple - peeled, cored and shredded
1 tbsp of coconut oil - plus extra for cooking
1 1/4 cups almond milk
D I R E C T I O N S
Mix wet ingredients and dry ingredients in 2 separate bowls, then combine. Set the stove top to medium heat and add 1 tbsp of coconut oil to the fry pan. Add the batter to the fry pan and cook for approximately 3-5 mains per side.
Top with 1 Tbsp of almond butter (or nut/ seed butter of choice) or coconut butter, and drizzle with 1 tsp of pure honey or pure maple syrup (try not to over sweeten)
(Makes about 6 pancakes)
T I P : Double the batch and freeze the extras. You can pop them in the toaster in the for next time.
